# Ingredients List:

01 - 1¾ cups plain 2% Greek yogurt
02 - 4 large eggs, room temperature

09 - 1½ cups spinach, wilted and squeezed dry
10 - ½ cup chives, chopped
11 - 1½ cups cheddar cheese, shredded (reserve ½ cup for topping)
12 - 2 cups diced ham

→ Mediterranean Sausage Add-ins

13 - 2 cups cooked Italian chicken sausage, crumbled
14 - ½ cup sun-dried tomatoes, chopped
15 - 1½ cups feta cheese, crumbled (reserve ½ cup for topping)
16 - 2 teaspoons dried basil (or ¼ cup fresh, added after baking)

# How to Make It:

01 - Set oven to 375°F and prepare a baking sheet with parchment paper or grease a muffin tin.
02 - Whisk together Greek yogurt and eggs until smooth and homogenous.
03 - Add flour, ground flaxseed, baking powder, salt, garlic powder, and optional red pepper flakes. Stir gently until just combined.
04 - Choose either ham and cheese chive mixture or Mediterranean sausage blend. Fold into the dough evenly without overmixing.
05 - Scoop approximately ⅓ cup of dough per biscuit and place onto prepared sheet or muffin wells.
06 - Sprinkle reserved cheddar or feta cheese over each biscuit. Bake in preheated oven for 25 minutes until golden brown and firm to the touch.
07 - Allow biscuits to cool for 10 minutes before serving or transferring to storage.
