Preheat the oven to 450 degrees Fahrenheit.

Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until browned. Stir in taco seasoning and red enchilada sauce. Simmer until thickened, then remove from heat.

Wrap the tortillas in a damp paper towel and microwave for 30 to 60 seconds until flexible.

Brush one side of each tortilla with olive oil. Place tortillas oil side down on a baking sheet. On half of each tortilla, layer 2 tablespoons of cheese, 1/4 cup of cooked beef mixture, and 2 more tablespoons of cheese. Fold tortillas over to enclose filling.

Arrange the tacos in a single layer on the baking sheet. Bake for 16 minutes, or until tortillas are golden brown and crisp and cheese is melted. Cool for 3 minutes before serving.
