01 - 1 pound lean ground beef (90% lean)
02 - 1 packet taco seasoning (about 1 ounce)
03 - 3/4 cup red enchilada sauce
04 - 2 1/2 cups shredded Oaxaca cheese, Mexican blend cheese, or Monterey Jack cheese
05 - 10 corn tortillas
06 - 1 tablespoon olive oil

# How to Make It:

01 - Preheat the oven to 450 degrees Fahrenheit.
02 - Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until browned. Stir in taco seasoning and red enchilada sauce. Simmer until thickened, then remove from heat.
03 - Wrap the tortillas in a damp paper towel and microwave for 30 to 60 seconds until flexible.
04 - Brush one side of each tortilla with olive oil. Place tortillas oil side down on a baking sheet. On half of each tortilla, layer 2 tablespoons of cheese, 1/4 cup of cooked beef mixture, and 2 more tablespoons of cheese. Fold tortillas over to enclose filling.
05 - Arrange the tacos in a single layer on the baking sheet. Bake for 16 minutes, or until tortillas are golden brown and crisp and cheese is melted. Cool for 3 minutes before serving.
