Set oven to 375°F (190°C) for baking.

In a large skillet over medium heat, brown ground beef until no longer pink. Add diced onion and sauté until translucent. Season with salt, pepper, and optional spices as desired. Drain excess fat.

Mix in cream of mushroom soup and sour cream. Stir thoroughly with the beef and onions, cooking for an additional 2 to 3 minutes until heated through.

Lightly grease a large casserole dish. Evenly spread the beef mixture across the bottom of the dish.

Sprinkle 1 cup of shredded cheddar cheese evenly over the beef mixture.

Place frozen tater tots in a single layer on top of the cheese.

Transfer the dish to the oven and bake for 25 to 30 minutes, or until tater tots turn golden brown and crispy.

Remove dish from oven, sprinkle with the remaining 1 cup shredded cheddar cheese, and return to oven. Bake an additional 5 minutes until cheese is melted and bubbly.

Remove from oven and allow to rest for 5 minutes before serving.
